HOW DO I CONTISE A CHICKEN?
Contising is a classic French technique which consists of making small incisions
in a chicken breast - or any other type of meat - into which you place herbs or other flavourings
which will later create little “bursts” of flavour.
When you are cooking a roast, for example, the flavours will permeate through all the meat of the joint
that has been contised, which will only serve to make it more delicious!
